For more than 250 years generations of the Kiersey family have been farming Ballyhussa Farm near Kilmacthomas. Situated between the Comeragh Mountains and the Copper Coast this idyllic location is home to the family’s pedigree friesian dairy herd. It also provided the inspiration for the three Kiersey brothers, David, Ivan and Tom to look at ways to create a value add farm-to-table food product. In 2018 their journey began, to create a luxurious ice cream using only the highest quality, locally sourced ingredients.
Though the brothers started out with eye catching ice cream rolling stall at festivals and markets, the quality of their ice cream was the real star of the show and taking what they had learned about customers taste preferences they began producing tubs of Freezin’ Friesian deliciousness. With flavours like Brownie & Honeycomb, Blackberry & Shortbread, Waterford Whiskey & Christmas Pudding, to name a few, it is truly artisan ice cream reimagined.
